Taiwan High Mountain Tea (高山茶, gāo shān chá) refers to any tea grown at an elevation above 1,000 meters in Taiwan's central mountain ranges. The most famous growing regions include Alishan (1,200–1,700m), Lishan (1,800–2,200m), Fushoushan (2,000–2,500m), and Dayuling (2,400–2,600m). The high altitude creates cooler temperatures, more frequent fog, and greater day-night temperature differences, which slow leaf growth and increase amino acid content. This produces teas with a distinctively sweet, floral, and creamy taste.
For lightly oxidized Taiwan high mountain oolong (such as Alishan or Lishan oolong), use water at 90–95°C (194–203°F). Pour the hot water directly over the leaves and steep for 45–60 seconds for the first infusion. Avoid using boiling water (100°C) as it may scorch the delicate leaves. For roasted oolong, you can use 95–100°C water.
High-quality Taiwan high mountain oolong can typically be re-steeped 5–8 times, with each infusion revealing different flavor notes. The first steep is bright and floral, the middle steeps develop more body, and later steeps become gentle and smooth. Premium teas like Dayuling or Fushoushan oolong can be steeped up to 10 times.
Alishan tea is grown at 1,200–1,700 meters in Chiayi County with a bright floral aroma and smooth, refreshing sweetness — an excellent entry point to high mountain tea. Lishan tea is grown higher at 1,800–2,200 meters in Taichung, producing a more complex, layered flavor with orchid-like fragrance, buttery body, and exceptionally long sweet finish. Lishan is generally more expensive due to lower yields.

Dayuling (大禹嶺) is Taiwan's highest tea-growing region at 2,400–2,600 meters above sea level. Tea plants grow very slowly at this extreme altitude, producing only small quantities twice a year. The leaves develop exceptional amino acid content, resulting in uniquely sweet, complex, and elegant flavor with no bitterness. Extremely limited production and high demand make Dayuling one of the world's most prized oolong teas.

Another great option is Jin Xuan (Milk Oolong), known for its natural creamy aroma.
